Test Steam Infusion Cooking
Adopting new technologies presents various business challenges and at OAL, we have developed a number of routes for our customers to test and trial Steam Infusion heating and mixing.
Option 1: Trials at Our UK Test Centre
Our test centre is located at the University of Lincoln’s National Centre for Food Manufacturing. Sitting within academic surroundings, the offsite location is perfect for blue sky thinking and breaking away from the day to day operations. With our Development Chefs on hand to facilitate and advise on recipe and process changes, it’s amazing what can be accomplished in a single day. Customers also have access to the university’s full suite of analysis equipment including sensory suite, Mastersizer laser particle size analyser and GC-MS (Gas Chromatography-Mass Spectrometry Analysis).
The system has all available configurations of the Steam Infusion Vaction™ unit including, In-Tank Steam Infusion, In Line Powder Entrainment Re-circulation, Single Pass Four Units in Series.
Option 2: Rental of In-Line Vaction™ Unit
OAL can supply a single In-line Vaction™ unit for testing at customer's facilities. The unit would need to be fitted into the pipework and connected to culinary grade steam. For larger food manufacturers with their own test centres, this can be a great route for thorough testing in order to best understand the capabilities of the technology. Our Development Chefs can provide on site training and ongoing application support.
Option 3: Rental System
OAL have a number of 500kg In-Tank Steam Infusion test systems available for rental. For longer term testing or semi-production use, the skid based system can be easily placed in a facility and hooked up to services so you can hit the ground running. Our Development Chefs can provide on site training and ongoing application support.
Option 4: Retrofit Steam Infusion to Existing Vessel
Based on extensive knowledge and learnings, OAL can offer process guarantees for certain applications. Customers can then retrofit the technology to existing vessels and perform their own testing safe in the knowledge that the applications will work
